Mix Vegetables Recipe

Here’s my easy – peasy recipe of nutritious yet delicious food Mix Vegetables you can serve it hot with chapatis, naan, pooris and kulcha.


Mix Vegetables


Preparation time: 20 min
Cook time: 30 min
Total time: 50 min

Ingredients Required:

1. Two cups of mix chopped veggies – cauliflower, carrots, potatoes, french beans, capsicum, peas.
2. One onion chopped finely
3. Two tomatoes chopped finely
4. One green chili chopped finely
5. One tsp ginger-garlic paste
6. two tsp coriander powder
7. Half tsp turmeric powder
8. One - fourth tsp chilli powder 
9. Half tsp garam masala powder
10. One tsp cumin seeds
11. Eight – ten paneer cubes 
12. Two cups water
13. Two tbsp cream or malai
14. Two tbsp oil
15. A few sprigs of cilantro/coriander leaves chopped
16.  Salt as per taste

Instructions:

1. In a skillet heat oil.
2. Add cumin seeds. Once they splutter, add the chopped onions,
Fry the onions till they become transparent.
3. Add the ginger-garlic paste. Fry for a minute or till the raw smell disappears.
4. Add the tomatoes. Keep on stirring till the tomatoes become soft and pulpy. 
5. The process of frying the tomatoes takes a little longer. 
6. Now add all the spice powders one by one.
7.Stir the spice powders with the onion-tomato mixture. Add the green chili.
8. Mix in the chopped veggies, salt and water,Cover and let the veggies cook.
9. Once the veggies  are half cooked. Add the cream. Give a stir,Cover again and simmer the veggies till they are done.
10. Don’t forget to check the veggies after few minutes,add more water if the water dries up and if the veggies are still to be cooked.
11. Add paneer don’t cover it with lid let it simmer for 2 min.
12. Serve mix vegetables dish hot with pooris, parathas, kulcha or chapatis.
